Myself and Bones can offer advice.

My biggest suggestion to you is do not have people over, they show up, and then ask "what's everyone want to do?"

Have your days\activities planned out.

Also, you can never have enough food.

That sounds like invaluable advice - and I hadn't really thought too much about planning out the activities since I'm generally a "go-with-the-flow" kind of guy.

You can totally "go with the flow" and still have a plan- don't take my comment as having every little thing planned down to the minute, rather, have a map of how you want to spend a day, and flexibility.

With the HBO LANs, typically they've been done in an order like this:

Fri- People arrive- hang out, catch a meal, laugh and catch up
Sat- All Halo all day- breaks for meals, wrap up in the late evening
Sun- Some people depart- play more party style games, do an event\go somewhere\do something
Mon- Sad manly tears of goodbye

If we had write ups of Bluerunner's last LAN and mine....oh wait, we never got to them :\
