Difficulty? (Destiny)
Am I missing something, or is there no way to increase the difficulty beyond not equipping new items? These missions are really cool, but it feels like it's on Easy mode compared to say, Halo.

As far as I know, the answer is "no". At least for your first playthrough. I don't know how far in you are, but I found the difficulty ramped up gradually throughout the campaign. The final 1/3 or so was decently challenging... vaguely equivelant to Halo's Heroic mode.
Difficulty?
I agree that the difficulty level is on the easy side. There were zero missions that I had to play over again in order to figure out how to beat it. At the same time, that also means that there were zero moments where I wanted to throw my controller through the monitor.
So I am pretty neutral on whether or not it is a good thing that it is on the easy side. I'm sure the end game content is going to be more difficult.

I've found solo play to be much more difficult than team play.

I'm pretty happy with it overall. I died a few times and I knew why immediately -- I overextended and was dumb.
My 8 yo will be able to finish solo on his own (with effort) and I think that is fantastic -- about exactly where the campaign should be first playthrough to experience the story without jarring deaths over and over. The hard stuff will come later, this is about enjoying the story that has been crafted and shooting things along the way.

Looks like I'm starting to get there, but I'm still enjoying it more when I keep my Power level slightly below the recommended. Luckily this doesn't seem to affect the level of drops (like they explained with engrams), so things are going well. Plus I have this level 53 Sword that's really fun to use.

Other seem to have the same questions
Looks like the Time review thought the same thing.

Update
Finished the campaign last night, the difficult did increase a bit, but not a ton. Also, I was running a mission with recommended Power of 170 at 160, and it was still pretty easy, so I dropped down to like 147 just to see what happened. It literally made no difference in my damage numbers, so it's very unclear to me how damage scaling works.

I've found solo play to be much more difficult than team play.
So far, I've ONLY done solo play. There are some things I'm putting off (Nightfall, eg), but I'm really enjoying playing this stuff without talking to anyone, right now. ;)

I'm the same way, at least for my first time through. I like getting as lost in the game as I can, wandering around a bit, taking in all the sights :)

Not challenging ...yet? - re: Difficulty
I have only been playing solo so far and I agree it seems like easy-mode in most missions so far. Disappointed in that, but really enjoying the game overall despite it ..and it allows you to relax enough to focus and not miss out on the story. 99% of the deaths I have had have been due to "misadventures" hehheh, ...that should probably be my gamertag.
I behave more conservatively and team-friendly when playing with a group, but when solo... I'm always getting in to trouble, it's like the in-game equivalent to real life "hold my beer" scenarios :)
and those areas with enemies nearly twice your light level.. just an opportunity for an amusing challenge to see how long you can survive by jumping over their heads, punching them and running around in circles. :) sometimes its a few minutes, some times its 2 seconds!
