I've accepted this fact for a long time. When I played WoW, I would create alts for the sole purpose of holding onto my immense amount of crap. Who knows when I might need 100 stacks of low level cloth or that one nostalgic junk item that can't be acquired anymore! I'm the kind of person who ends a game with an inventory full of health potions that I was saving for an emergency that never happened. And this hoarding has prevented me from getting back into Destiny 2.
I stopped playing after Season of the Undying ended and every time I boot the game up again, I remember that my vault is completely full and I can't figure out what to get rid of. I know that each new seasons is going to introduce a number of new weapons/armors, but I have an unreasonable desire to min/max my gear. The problem is that I don't really know how to easily figure out what to keep, and the fear of dismantling something important keeps my vault overflowing with (probably) useless crap.
I used to use http://d2checklist.com to figure out what weapons are potential godrolls (even though I admit the weapons might sit in my vault unused forever). That worked well so far but now my armor is lining the walls of my vault with no end in sight. With mods being limited to specific burns I feel like I need to have each combination ready to go to match whatever playstyle I'm running. For example, I'm not sure if it's still viable but last time I played I loved running Monte Carlo with Peregrine Greaves for never ending Titan knees to the face. But Auto Rifle perks needed solar burn armor and then I figured if I ever changed weapon combos I'd want to swap those burns for whatever matched the new weapons and what about legacy armor using the old system with perks I may not be able to get on certain armor pieces anymore, and...my vault is sitting at 497/500.
I was hoping that vault capacities would be increased (or the Collections would be updated to somehow preserve unlocked perk combos on armor/weapons) but I haven't heard rumors of that happening. The sad part is I know I'm completely missing content but the thought of dismantling something important that I've earned and can't easily replace kills me. Is there an easy way to reasonably filter out gear so that I can keep my hoarding within reason? How can I quickly figure out if armor is worth keeping or not? I'll never stop hoarding but there's got to be some middle ground here.

I'm a collector as well (currently #21 on the leaderboard); managing my collection is just part of the game for me. Assuming you're using DIM, the "is:reacquirable" is a good starting place - anything that filter highlights (that you're not actively using) can be safely deleted and retrieved from the collection if needed.
Keeping 9 items for each slot for 3 characters, your total available space is just under 800 (though just 81 weapon slots and 135 armor slots on characters).
It's a game of priorities and tough choices. Personally I've decided to let Bungie's (ill conceived and unfriendly) elemental affinities and armor mod limitations dictate my priorities. I'm keeping a solar, arc and void set of the Reverie Dawn and Dreambane armor sets for each character - that way I can use any mod in any affinity. On top of that, I'm collecting a single set of seasonal armor for each character, and a single set of current raid armor for each character.
With the above strategy, I'm going to run out of space at the start of the next season. Ultimately this is bad design on Bungie's part - a "looter shooter" without the ability to keep your loot. I'm hoping they fix the "Collection" functionality before I completely loose interest, but they don't seem to be interested in anything beyond Eververse sales and low-effort "seasonal activities".

I've got problems too, it's made me hate getting rewards because it might be a moderately interesting roll that I'll feel obligated to keep.
I pretty much have defaulted to keeping Iron Banner Armor and Seasonal armor only, heavily prioritizing Intellect/Recovery/Mobility. I'm close to abandoning any armor set completion desires and only keeping every other season affinities with rolls I want, but that sounds brutal to try to figure out for 3 characters.
I could also probably cull down weapons significantly. I've been starting to get rid of dupes of god rolls between types of weapons - if I have an Outlaw/Rampage primary sidearm, I don't need to keep that roll for any other sidearms.
Every time I think I'm out of low hanging fruit, I can usually think of some more, but the 10 spaces I clear are usually gone within the week, so it's a never-ending cycle.

Checklist & D.I.M has been my Vaults savoir for many multiples of seasons (not sure on the exact number). Yet even such a "divine" utility which they provide has its limits. For these last two Seasons, it's been close. This season might just get me, though I said that last season too. I'm bursting at the seams with amazing/interesting rolls; I've got elemental affinities you can no longer get, GodRolls, Static "Curated" rolls that inexplicably you can't pull from collections because it exists in a "Random Rolls" slot, and even Masterworked Weapons that if pulled from collections, are no longer Masterworked (like Exotics are).
I'm not a Video Game Item Hoarder, I'm a Video Game Item Cook. I enjoy taking the little game play ingredients and making builds. I enjoy being a Key maker in changing how things play. And since the game is live, one patch you might have a build that SLAPS, then in another patch you might as well be throwing frozen bags of peas. It helps to have a large varied selection (and an app that you can search from, as the in-game Vault is a joke against the core needs of the "loot" game).
That said, the core question; Is there an easy way to reasonably filter out gear so that I can keep my hoarding within reason? How can I quickly figure out if armor is worth keeping or not?
Easy is relative.
Quick answer is you are using it. Checklist and Dim are the easy answer. Learn the tool, and the lines needed to sort through things. That's the quick answer. Pure use of their recommendation system. You'll possibly miss out on some things that aren't pure meta, but It couldn't be easier. Just sit back and hoard anything with a shiny logo next to it; shield or swords or thumbs up.
Then we get more "advanced" (more detailed metrics) in deciding what says and what goes. Is this easy? It was to for a time, but even this is reaching a limit for me. What metrics are you using to compare? Perks, Frames, Meta Usage/ Word-on-the-Street, Looks? It all depends on what your usage is, what is your fun? In D1, I payed little attention to perks. If i got a gun I used it, and if I liked how it felt to play I kept it, if I didn't I sharded it. Those were simpler times. NOW, to play this game and keep my vault with its variation, I need to know the difference in gun frames & what the perks do. How each effect the stats and change up the play. If I see a roll with Grave Robber & Swashbuckler, that's Good! Those perks complement one another. Graverobber gives you ammo in the mag/clip on melee hit, and Swash maxes out its buff on damage when you melee something. It's good! Such example is fun roll out of many to get! Oh!... but it has drop mag, which isn't BAD! Yet with Graverobber already supplementing quick reloads, do I want this? Do I want the extra large bump in conventional reload speed at cost of existing ammo in that mag/clip? Well... what weapon is it? Infinite Paths 8 is a Pulse Rifle, a ranged weapon. Does having these melee centric perks make sense? Drop mag is nice to have. Oh... it's Bug-Out Bag you say? I must have misheard, that's a Sub-machine Gun. Far closer range, so these perks make more sense.
This back-and-forth continues, with more and more variables to consider. Existing stock, frames, stats, use, so forth.
Then we get to the most advanced stuff. I only just recently reached this point, and have been working on figuring out if I can pull it all off. If you're a programmer, this may be more friendly/"easy" for you then it is for me.
Are you aware how Checklist & Dim work to give you which rolls are good or not? It's easy to miss. I only recently dug into it myself - as what we have is not (or no longer) enough (for my needs). With Checklist it's this list for PVE & and this for PvP. With Dim it's this github hosted list. There is also an "opinionated version" which I don't recommend as its opinions are out of date. Still though, useful to see, as it gives an idea to what you can make. Yes - YOU. It's very advanced and technical and potentially time consuming, but you can make it.
You can make your own list. You can handmake what FOR YOU is worth keeping and sharding. Details are in that github link (as well as a tool to make permutations easier). Can't say much else as I only just recently looked into this. Lotta work - but potentially VERY powerful.
If all else fails and this is just not enough - go talk to the creators of these tools. One of the perks of Homebuilt is you can talk directly. Twitters, Reddits, all that. You need a feature, go ask for it. (I'm almost there myself.)

Yes, every weapon is one patch away from being god tier or complete garbage.

I did the same for a long time, ultimately getting rid of weapons with "impossible to retrieve" elemental affinities when I had a suitable replacement. For example, I kept solar and arc Inaugural Address pulses until I had a better solar (Right Side of Wrong) and arc (Infinite Paths 8). I'm still hanging onto 2 drangs with unique elements just since an exotic might benefit from them, but I haven't fired those for over a year.

I thank every person in my Fireteams as of late that has put up with my extremely frequent Tower/Wall trips since my inventory is constantly overcrowded. The constant trips have become a joke that has quickly progressed to very un-funny levels for me, and I can only imagine the pains anyone that plays with me goes through. :(

A genuine question...
It received about 550 comment replies and almost 7,000! upvotes in a short amount of time before it was buried by other topics. It also received a few replies from Cozmo. Vault and Collections issues, are a known problem, that has been long-aching and seems like hasn't been receiving proper attention. They could deperately use a fix NOW, not wait even longer for whenever they can adress it next or fester in line behind other issues. For many of us, I don't think this can wait for next season or the next MAJOR update.
( not to mention, the offhanded idea of "retiring weapons" probably won't help the issue but rather, instead, exascerbate the problem by creating a new list of items I'm going to be compelled to hang onto at current level or lose - Lukems, please refer back to The Bungie Podcast 11-29-2017 timestamp ~14min; Please communicate it clearly, was the idea of retiring weapons an unfinished idea that may not materialize?Aspiration? Or a Commitment?)
A little while back I had to make the tough decision of getting rid of my Year 1 Masterworked weapons (excluding elemental affinities you can no longer get). It was a very difficult decision but I decided those were the most numerous and easiest to delete and re-acquire later should the need arise. I kept them because I'm firmly in the 'have-nots' population category regarding excess upgrade materials and consumable inventory. These were items I literally could not afford to Masterwork myself, but they dropped to me already MW'd so they were invaluble at the time. I came to the realization that the inventory slots they were occupying had become more valuble than the fact these items were pre-upgraded for me. I gained some breathing room in the Vault that has since be re-filled mostly with Season Pass items. I also came away with a few hundred Enhancement Cores which I plan to keep a hefty stock of (that way I can always re-pull those deleted items and hopefully have the ability to Masterwork them at will)

Just delete them. I had a bunch too, I finally just went through this sequence of thoughts:
1. Not one single other person in the entire world cares that you have them.
2. Under what circumstance could you possibly need them to play this game? Maybe a future raid has a whole bunch of enemies with a specific shield type that are weak to sidearms? Let me pull out my Y1 Solar Traveler's Judgement? How often is that going to happen? And even if it did, a current weapon would work just fine.
3. You won't even remember what you had after you delete them. Trust me, you will never wake up in the middle of the night in a cold sweat because the only Uriel's Gift you have access to does Arc damage.
I'm currently working on applying this logic to a variety of other item categories.
This is really healthy advice.

That has been my mentality to gear as a whole. My vault doesn’t even go to the second page. I have never had a problem conquering any content in the game because I didn’t have the right perk. They model don’t matter. That’s not to say there aren’t effective or fun combinations, but it is definitely diminishing returns with filtered through the lens of amount of effort required. I have a few Crucible setups, and that’s pretty much it. If I can’t manage to have the load outs I like actually on my characters instead of in my vault, that’s my cutoff.
