I'm sure this has been brought up before, but I was struck last night by the realization that sparrow racing would be a ridiculous amount of fun.

I was playing the Mars Strike mission (the one with Valus T'Arik) last night. After the battle with the giant hover tank, my fireteam all hopped on to our Sparrows and raced down through the canyon as fast as we could. Nothing had been planned or said, but we naturally started to compete with each other as we blasted through the various twists and turns.

There is a specific moment towards the end of the run where you go down through a tunnel, then back up to an opening. We all burst off the ramp into a wide open canyon, T'arik's base off to the right, with several other guardians waging war against the Cabal defenses. As my fireteam was flying through the air on our Sparrows, it occurred to me what an awesome sight this is for everyone in the area. When I'm on foot, I always get excited by the sight of other guardians blasting past me on their sparrows. Likewise, driving at top speed past an epic battle never gets old.

I think some kind of Sparrow Race activity would bring a cool element to the open world. Some people would find it to be a fun activity to do, and for everyone else it would be cool to witness races taking place while out on patrol.

It would be a ton of fun for some, me included! It also would help give purpose to getting those upgraded Sparrows!

And there's already a ton of good vehicle pathways, they just need to work out some sort of checkpointing system. Maybe they could even use timers from elements in Public Events.

I also loved your description of pouring out of the tunnel... One of the first "Record That" moments for me was on a Sparroe: I actually ran down a Goblin! :P

They need a mad guardian in the tower who just challenges people to do crazy stuff. Because war is mad, and being an immortal zombie is mad, and it's gotta send somebody mad. Racing around courses in hostile alien territory would be one of the things they could challenge you to do.
