That's only true against enemies below/at your level (Destiny)

Right. Once you're even with the enemy, your level increasing further does not affect the damage you deal or take.

I've yet to re-run Crota and VOG and was wondering about this.

There will be a small difference in the damage you take compared to when you ran it previously, but that will be due to the fact that your defense is higher now - your level is having no effect.

This is in stark contrast to Borderlands, where if you're 5 levels above the enemy you stride across the battlefield like an invulnerable god, making them all explode with a mere thought. This is one thing I think Destiny's done better than Borderlands. Despite the obfuscation of the actual mechanisms (which is annoying), the end result is that an overleveled player doesn't have nearly as comically easy of an experience.
