Gotta double tap the home button and then press Y for screen shot. The prompt takes a second to load, so I don't know if you have to wait to hit Y or can hit it immediately.

edit: I don't have kinect, but you may be able to voice command a screen shot? i know you can record clips that way. I hear others shouting xbox record that often.
