Io: Every game needs lava levels.

Europa: Every game needs ice levels.

Titan: This is probably an inevitability.

Io:
Lava from volcanos on Io can be thrown up to 500 km (300 miles) above the ground. I'd love to see some lava get tossed into orbit, or maybe even entrained into one of the magnetic field lines of Jupiter :)

FTFY - Titan: Every game needs liquid methane-ethane lakes with cryovolcanos levels.
