They do spawn in the same order as the platforms are opened, but cannot be controlled, they are timed. I could be wrong

Well, that's something that could be very easily tested. We should try waiting to jumping on the 3rd or 4th plate & see if the ogre comes up before we get on it. I pretty positive they spawn based upon when the plate is activated.
