Brotherhood was my favorite (with 2 right behind). You could ride horses straight into the city, there was lots of countryside to explore, Ezio felt like a hero, the soundtrack was beautiful, and I absolutely loved collecting the art.

I totally forgot! Yes - the soundtracks are fantastic - at least the early games that Jesper Kid composed. I felt like he nailed the feeling and setting of the game.
