At least with Skolas you could damage him at will, while making a strategy about movement, objectives, and poison exchange. And the other bosses had mechanics to deal with throughout the fight that kept things interesting (finding Qodron's Eye, lol).
I still think Skolas is the best boss fight we've had in Destiny. He was hard, and required some good teamwork, but it was a really fun fight I thought. Knowing the phases of the fight was instrumental, and trading the essence back and forth made for some great tension while still being recoverable if someone screwed up.
