6th Generation of Video Game Consoles: Xbox
Xbox (2001) - That's it. The OG. There were no major revisions or significantly different versions of the original Xbox.

7th Generation of Video Game Consoles: Xbox 360
Xbox 360 (2005) - The launch 360. Swappable 20GB HDD.
Xbox 360 Elite (2007) - Now in black. Comes with an HDMI port and 120GB HDD.
Xbox 360 Slim (2010) - Redesigned smaller shell. Now has integrated Wi-Fi and swappable 250GB HDD, with a cheaper 4GB option.
Xbox 360 E (2013) - Second redesign, meant to replicate the appearance of the Xbox One. Internally it is largely unchanged from the Slim model.

8th Generation of Video Game Consoles: Xbox One
Xbox One (2013) - The launch Xbox One. Looks like a VCR.
Xbox One S (2016) - Slimmed down revision. Can now play 4K video content.
Xbox One X (2017) - Premium model. Roughly 5X more powerful than the XB1S. Can play games at increased resolutions and framerates.
Xbox One S All-Digital (2019) - Cheaper XB1S without a disc drive.

9th Generation of Video Game Consoles: Xbox Series
Xbox Series X (2020) - Most powerful console, will allegedly play games at 4k-120FPS.
RUMOR Xbox Series S (2020) - Weaker and cheaper version of XSX. Will target lower resolutions and framerates.

Conclusion: The names are pretty bad since 2005. They really should have just used the code names. Durango, Scorpio, Scarlett, etc.
